Easy Creamy Fresh Broccoli Salad

This perfect-for-summer salad is full of fresh broccoli, salty bacon crumbles, savory onion bits, hearty seeds, sweet dried cranberries and dressing in a sweet, creamy, tangy (darn delicious) simple dressing.  If you are going to give in to a salad this summer, let it be this one… you won’t regret it!  It’s that delicious!

This is one of my favorite summer salads to take to family gatherings or BBQs.  It’s always one of the first salads to be gobbled up.  It’s filled with so many superfoods like pumpkin or sunflower seeds and dried cranberries.

I say it’s a “healthy” salad with its fresh broccoli and superfoods like pumpkin, sunflower seeds, and dried cranberries.  We just won’t talk about the yummy salty bacon crumbles or creamy delicious dressing too much.  😉

With July being a month full of freedom celebrations here in Utah (the 4th of July and 24th of July), we’ve gathered with friends and family a lot.  Anytime we attend a summer potluck I love bringing this salad because it looks so healthy yet tastes amazing.

My brother-in-law requested this salad at his birthday bash potluck over a sweet pudding fluff salad.  Of course, I took both but he preferred this fresh broccoli salad over all the rest.

There are lots of variations to this salad.  I’ve seen some with apples added or minus the bacon or seeds.  When it comes down to it… this is the best most simple creamy fresh broccoli salad out there.  Okay.  Okay.  Maybe I’m a little bias but seriously, this salad will rock your socks and your picky broccoli eater might even snarf down a scoop of this broccoli salad.

Here’s where I start.  Broccoli, red onion, and Salad Topper mix by NaturSource (pumpkin seeds, sunflower seeds, dried cranberries).  A note on the Salad Topper.  I came across this product at Costco last month and decided to give it a try.  I have fallen hard in love with it.  I usually stick with plain toasted salted sunflower seeds with this salad but the pumpkin and dried cranberry add so much.  It’s great to have all three of these ingredients in one place.  If you’d like to try it for yourself, you can find it here.

Once I have the bacon cooked and crumbled, onion minced, and broccoli cut into bite-sized pieces, this salad is ready to assemble.  I whip up the super simple (and delicious dressing) so it’s ready to go.  To give the dressing and sugars more time to combine, mix the dressing before cutting or chopping any veggies.

To finish this salad, all I do is throw the salad ingredients in a large bowl then pour the dressing over the top.

Give it a quick toss to coat the broccoli and other ingredients and it’s ready to enjoy.  EASY! Right?  Oh man, you are going to love it.  It’s so delicious.  It’s a little sweet, a little salty, a little tangy, and a lot healthy if you ask me.  😉  That’s pretty much a win, win in my book!

This salad will look gorgeous on any summer table.  I also like to double this recipe when I take it to a potluck.  When doubled it makes about 14-16 servings.  Our Costco typically carries broccoli crowns in a 3 lb bag.  I use a bag of broccoli and pound of bacon when doubling which makes for less leftovers that have to be stored in the fridge.
