Layering Your Dinner:

  1. Base Layer: Start with a 20-inch piece of tin foil. Place a row of lemon slices down first.
  2. Salmon: Place the salmon, skin side down, on the lemons. Add a dollop of butter, a sprinkle of lemon pepper, garlic cloves, and onion pieces over top.
  3. Vegetable: Cut asparagus sprigs in half or pieces. Toss or topped with butter and garlic. Place asparagus to each side of the salmon.
  4. Toppings: Finish with more lemon slices on the salmon. The lemons will help avoid burning the fish and keep it moist while adding flavor.

Cooking Methods:

  • Campfire: Wrap the tin foil into a sealed pack, folding long sides together then rolling the ends. For campfire cooking, double wrap to retain moisture and prevent burning or leakage. Cook for 15-20 minutes or until the salmon reaches 145°F and the veggies are crisp tender.
  • Oven: Single wrap is sufficient. Bake at 350°F for 20-25 minutes or until the salmon reaches 145°F and veggies are done.

Variations:

  • Substitute asparagus with green beans
  • Try limes in place of lemons
  • Use coconut oil or olive oil instead of butter for a dairy-free option
  • Try other white fish like pollock, hake, cod, or halibut for variety
  • Season with fresh herbs like rosemary, cilantro, thyme, basil, chives

Frequently Asked Questions:

Can I use a different type of fish?

Yes, any firm white fish will work well in this recipe. This includes fish such as halibut, cod or pollock. Feel free to season with your favorite spices for each kind of fish.

Why do I need multiple layers of tin foil?

Double wrapping when cooking over a campfire prevents moisture loss and protects against burning. It also helps to maintain a mess-free cooking experience. There’s no need to double wrap the dinners if you plan on cooking in the oven.

Can I use frozen salmon steaks?

Yes, ensure they’re fully thawed and patted dry before assembling your tin foil dinner for best results. You can also use skinless salmon as well. Removing the skin before cooking will lessen the fishy flavor that may be present.
