No-Bake Snickers Cheesecake Bars

Snickers candy bars are one of my favorites.  The sweet nougat, caramel and salty peanuts all covered in chocolate.  That’s one great flavor combo.  These No-Bake Snickers Cheesecake Bars are an upgrade with a similar flavor combo and cheesecake in place of the nougat.  It will please your snicker and cheesecake lovers alike.  I’m a huge fan of both.

  • No-Bake and perfect for summer.  I like making these bars any time of year but especially in the summer when turning on the oven is the last thing I want to do.  I can get my sweet treat fix without adding to the heat.

  • Quick and easy to make.  No crazy ingredients here and the directions are simple.

Recipe Overview

Graham Cracker Crust:

I start by having the kiddos help me crush up about a sleeve (8-9 sheets) of graham crackers.  To make for easy cleanup and fewer dishes I mix the graham cracker crust right in the pan.

Once the crust is mixed and pressed into the bottom of the pan I pop it into the fridge to chill out while I make the cheesecake filling.

Cheesecake Filling:

Cream cheese and powdered sugar into a bowl for a quick mix.  You could add a little vanilla or almond extract if you’d like (about 1 teaspoon).  I like mine without because it lets the tart cream cheese shine through.  Once the cheesecake mixture is blended and smooth I add it to the top of the graham cracker crust.  Once smooth, it’s ready for the caramel layer.

Caramel and Nuts:

For quick and easy assembly I use caramel squares. If time allows homemade caramel is always better. My favorite soft caramels recipe can be found HERE.

I typically say homemade is better but if you’re in a time crunch and need a sweet treat fast, pre-made caramel squares are great.  Just add a little cream to the caramel and microwave until melted.  Once the caramel mixture is smooth and cooled slightly it’s poured right over the cheesecake layer.  Then comes the roasted salted peanuts.

Chocolate Ganache:

Once the peanuts are spread evenly, I add the final touch, chocolate ganache, right on top.  Once it’s smoothed, into the fridge it goes to set.  In about an hour you’ll have a delicious Snickers-filled cheesecake bar to share.

Ideas For Easier Cutting:

The one thing I do switch up sometimes is the order of layers.  The cheesecake filling is pretty soft and sometimes smooshes out of the sides because the chocolate and caramel are a bit more firm.  You can put the caramel and peanut layers onto of the graham cracker crust then add the cheesecake layer and top it with the chocolate ganache.  Tastes the same but is a little easier to cut.  Either

No-Bake Snickers Cheesecake Bars

Ingredients

  • 1 sleeve graham crackers, crushed, about 9 sheets
  • 1/2 cup butter, melted
  • 12 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla or almond extract, optional
  • 12 oz caramel squares, about 40-48 squares
  • 1 cup cream
  • 1/2 cup roasted salted peanuts
  • 1/2 cup chocolate chips

Instructions

Graham Cracker Crust:

  1. In an 8 x 8-inch pan mix crushed graham crackers and melted butter until moist.  Press firmly into bottom.  
  2. Place in fridge while preparing next layer.

Cheesecake Filling:

  1. In a medium-size bowl blend softened cream cheese and powdered sugar together until smooth.
  2. Add vanilla or almond extract if desired.  
  3. Pour and smooth cheesecake filling over graham cracker crust.
  4. Place back into fridge while preparing next layer.

Caramel & Nuts Layer:

  1. In a microwave safe bowl, add unwrapped caramel squares and 1/2 cup cream.  Heat in microwave 30 seconds at a time, stirring in between each heating session, until smooth and melted.  Pour and smooth over cheesecake layer.
  2. Evenly sprinkle roasted salted peanuts over caramel.  Place in fridge until chocolate ganache is ready.

Chocolate Ganache:

  1. In a microwave safe bowl, add chocolate chips and 1/2 cup cream.  
  2. Microwave 30 seconds at a time until warm (about 1 minutes).
  3. Stir mixture starting with small circles in the middle until a dark rich chocolate color is observed then widen the circle until all the cream is fully blended into the chocolate. This will take a minute or two to complete.  
  4. Pour and smooth over peanut layer.
  5. Chill in fridge for at least an hour to help harden and set.  Cut into 9-16 pieces and enjoy.

Notes

You can also assemble these bars with the caramel and nuts on top of the crust then the cheesecake filling and chocolate.  This will allow you to cut cleaner pieces without the cheesecake filling pushing out if the caramel and chocolate are firm.

Crust-->caramel-->peanuts-->cheesecake filling-->chocolate ganache.

Same great flavor just a little different look.

Storage: Store these cheesecake bars in a covered or airtight container in the refrigerator for up to 3-4 days.

    • Hi Darrell! Great question! Either, cream or heavy whipping cream (18% or 35%) will work. I prefer the higher fat content because it becomes thicker (stiffer) when whipped which is great for no-bake cheesecake. Regular whipping cream will work too if that’s what you have on hand.
