Sweet Baked Fluffy Omelet

Have you ever tried a fluffy omelet before?  If not, you are missing out.  This Sweet Baked Fluffy Omelet is full of light, airy, egg-y goodness and covered in melted butter and sugar.  It’s a delicious addition to any breakfast table and is ready in under 30 minutes. Yum!

When I was a little girl my grandma, who lived through the block from me, would make these fluffy omelets all the time.  They were delicious!  She would bake one up and slather it with butter and liberally sprinkle it with sweet sugar the second it came out of the oven.  When I make a sweet fluffy omelet and take that first bit, it takes me back to all those great memories of my grandma in the kitchen.  I love food memories.

My girls love these fluffy omelets just as much as I did when I was little.  The first time I made a fluffy omelet for them, LouLaw said, “mom, these are sooo yummy! I could eat the whole thing.” Straight out of the mouth of babes.  It is probably because when you taste this fluffy omelet it’s like biting into a sweet, buttery, airy cloud.

As you could imagine, the ingredients are pretty simple.  Eggs, eggs, and more eggs (with a little sugar, salt, vanilla and water).  😉

Ingredients

This recipe is very easy to make and comes together quickly.  I start by separating the egg yolks and whites.  Make sure no yolk gets into the whites or you’ll have a hard time getting them to a very stiff peak.

Next, I beat the egg whites until they are very stiff (stand straight up when the beaters are lifted out). Once they are stiff I set them aside.

Then I add the sugar, salt, vanilla, and water to the egg yolks and beat them for thirty seconds to a minute.

I carefully fold the stiff egg whites into the yolk mixture.  The fluffy egg whites are what give this delicious breakfast omelet it’s airy consistency.

After the egg whites are folded in, I pour the fluffy omelet batter into a greased cast iron or oven-safe frying pan.  I like to use my 8-inch cast iron skillet because it heats more evenly and tastes amazing.  Once the fluffy omelet batter is evenly distributed in the pan, into the oven it goes.

Look at this omelet.  You can practically see the airy fluff pockets in it.

When the omelet is done, I immediately slather it with butter and sprinkle it with sugar.  We like to use powdered sugar but you can also use granulated sugar.  The sugar adds this delicious sweetness.  That and the fluffiness make this omelet one of a kind.

This fluffy omelet is a great addition to a brunch table.  It’s light and sweet.  We love to enjoy it with fruit such as raspberries or strawberries.  Being as it isn’t raspberry season, we even enjoy this omelet with a handful of frozen raspberries.

Sweet Baked Fluffy Omelet

This Sweet Baked Fluffy Omelet is light, airy, and covered in melted butter and sugar. It's a delicious breakfast addition and ready in under 30 minutes.

Ingredients

  • 5 eggs, whites and yolks separated
  • 1/2 tablespoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon water
  • berries, sugar, butter, for topping

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat egg whites to stiff peaks (stands straight up when beaters are lifted out).
  3. Beat yolks, sugar, salt, vanilla, and water together for 30 seconds to a minute.
  4. Carefully fold egg whites into yolk mixture. Pour into greased cast iron skillet (8-inch) or oven safe frying pan.
  5. Bake for 15 minutes or until light, fluffy, and set.
  6. Slather with butter and sprinkle with powdered or granulated sugar. Top with berries.

  1. Hi! Love the recipe. I’ve made it the past two mornings for my boyfriend and I 🙂 The only problem is that each time I made it, it comes out looking beautiful and fluffy. However, by the time I’ve finished putting the toppings on (only about 30-60 seconds) the omelet completely sinks down into itself. Any tips?
