Add Dry Ingredients:

  1. Add flour, salt, and sugar to the liquid mixture. Use a hand whisk, blender or electric hand mixer to eliminate flour clumps.

The batter should be smooth, thinner than pancake mix but thicker than oil. If you feel the batter is too thin after making the first crepe, feel free to add a little extra flour. If too thick, add a couple tablespoons water.

How To Cook Crepes:

  1. Heat a greased 10-inch nonstick skillet or cast iron flat skillet. Pour about 1/4 cup batter, tilting the skillet to spread evenly.
  2. Cook over low-medium heat for 45 seconds to 1 minute, then flip and cook for another 20-30 seconds. Adjust cooking time for desired doneness.

Remember that crepe making is sort of an art. It might take a few tries to get the hang of it. If you find the crepe is sticking to the pan or ripping when flipped, try turning the heat up just a little or cook longer.

Ingredients

  • 1 12-oz can evaporated milk
  • 6-8 oz water, about 1/2 evaporated milk can full
  • 4 eggs
  • 1 teaspoon salt
  • 1 Tablespoon sugar
  • 1 1/4 cups flour
  • butter or cooking spray

Instructions

  1. Whisk (with a hand whisk or electric hand mixer) evaporated milk, water, and eggs.
  2. Add salt, sugar, and flour. Whisk until there are no flour clumps or lumps in the batter.
  3. Heat 10-inch skillet over low-medium heat.  Spray pan with cooking spray or coat with butter. 
  4. Pour about 1/4 cup crepe batter into the middle then swirl pan quickly to spread batter evenly over the entire bottom of pan.  Cook for about 1 minute then carefully flip over.  Cook additional 20-30 seconds until crepe is cooked through.  If darker color is desired, cook longer.
  5. Serve with your preferred filling (syrup, jam, nutella, peanut butter, whipped cream, savory filling).
