Peanut Butter Energy Balls

These Easy Chocolate Peanut Butter Energy Balls are great for breakfast, lunch, or a quick on-the-go snack.  Filled with oats, almonds, flaxseed, peanut butter and more, they’re power-filled bits of goodness packed with lots of flavor.

With the new year here, and that “let’s get healthy” goal always at the top for me, this recipe is a go-to for us.  It’s so yummy and helps fit hunger and low energy.  I like to put a special ingredient in them to give them that awesome crunch factor.  Can you guess what it is?

These babies are packed with protein and will make you think you are enjoying a piece of dessert heaven.  Just beware, these bad boys aren’t the lowest in calories and are dangerously good. 😉  Put a couple of these in a bag and have a quick breakfast, lunch, or after gym snack.

(Don’t tell anyone, but I think I ate half of the last batch I made. Shhhhh! It’ll be our little secret).

These energy balls are so easy to make.  They’re a no-bake so no need to turn on that oven.  Here’s how I make them but before I get started, did you guess the secret crunch ingredient?  If you said rice krispies, ding ding ding, you win! I love the way the krispies make your mouth crackle and pop with crunchiness. YUM!

 I make this in a large bowl.  The batch is a pretty good size, so make sure to give yourself plenty of room to mix the ingredients.

Ingredients Needed:

  • Old Fashion Rolled Oats
  • Peanut Butter
  • Ground Flaxseed
  • Rice Krispies Cereal
  • Honey
  • Mini Chocolate Chips – milk or semi-sweet, whichever you prefer
  • Almonds – sliced or chopped

Recipe Overview:

I start by adding all the ingredients in the bowl.  Blend them until all are combine and incorporated.  Once it’s mixed well, I use a large scoop to measure them out then press and roll them.  By pressing them together, this helps them keep their ball shape.  I set mine on a cookie sheet and let them chill out in the freezer or fridge for a bit.  This also helps them keep their shape.

Although these energy balls don’t have any ingredients in them that require refrigeration, I still like to store mine in the fridge.  That way, if I’m throwing them in a lunch, diaper bag, gym bag, or whatever, they will hold their shape better.

If you are a peanut butter lover like I am, these energy balls are a must-try.  They really are sweet enough to count as a dessert but full of lots of “healthy good stuff” to be breakfast, part of lunch or a snack all on their own.

Peanut Butter Energy Balls

Yield: 24 energy balls
Prep Time: 5 minutes
Total Time: 5 minutes

These Chocolate Peanut Butter Energy Balls are filled with oats, almonds, flaxseed, peanut butter and more. A perfect quick-n-easy energy source on the go.

Ingredients

  • 1 1/2 cups Old Fashion Rolled Oats, (not 1-minute quick oats)
  • 1 cup Rice Krispies cereal, the secret "crunchy" ingredient
  • 1/2 cup almonds, sliced or chopped
  • 1/2 cup ground flaxseeds
  • 1 cup creamy peanut butter
  • 1/4 cup honey
  • 1/4 cup mini chocolate chips

Instructions

  1. In a large bowl, mix all ingredients well.
  2. Shape into balls a little smaller than the size of a golf ball (about 3 tablespoons).  Chill in fridge or freezer.
  3. Store in airtight container in the fridge or on the counter.
