Recipe Overview:
These s’mores cookies are pretty straight forward to make.
Make the Cookie Dough:
Start by crushing the sleeve of graham crackers. Set them aside until the dough is ready for them.
Next, in a large bowl cream the butter and sugars together. I prefer using a hand mixer for a cookie recipe like this. You can do the same or give your arm a workout and mix it by hand.
Once the mixture is creamy and fluffy (about 2-3 minutes), add the eggs.
After the eggs are mixed in, add the vanilla extract and dry ingredients (flour, crushed graham crackers, salt, and baking soda).
Mix the dough only until the dry ingredients are mixed in. Don’t over mix.
We save the best for last. Fold in the Jet-Puffed Mallow Bits and chocolate chips, being carefully to only mix until they are evenly distributed.
Bake The Smores Cookies:
Bake these sweet smores cookies in a preheated 350°F oven for about 8-9 minutes until the cookie edges just began to brown.
Right after pulling them from the oven, give them a tap-tap. This will release any additional air in the cookie and help them stay soft and chewy.
Warning: if you eat one you’ll want more. Don’t say I didn’t warn you!
It doesn’t take a smoky campfire, hot sticks, and sticky marshmallows to enjoy smores. These easy cookies are your ticket and your family will love them.
