Back to school already!?!? Where did summer break go?  I feel like just last week we were living in Arizona getting ready to move back to Utah and my oldest was only 1.  She’s 6 and started 1st grade this week.  Yikes, the time has flown by!  I hope you all find a happy place with back-to-school in full swing.

To help ease back-to-school craziness, I have a super delicious, quick-to-make, healthy fruit and veggie green smoothie recipe to share.  It’s perfect for those crazy busy mornings or cool after-school snack.  The kids won’t even know they are getting a little extra veggie goodness in their diet.  It’s our little secret.

My little, not so little anymore, family loves fruit so naturally, we love smoothies too.  My little ladies would eat smoothies with every meal if I let them.  With this recipe, I almost would be okay with that. Haha.

This green smoothie is packed with all the flavor and goodness of a traditional fruit smoothie, the kind my family LOVES but with an added veggie bonus.  Spinach is the secret ingredient and color maker in this deliciously fruity treat.  My kids slurp down this yummy cold green smoothie without skipping a beat or thinking twice.  Win, win for this mama!

What you need (full printable recipe is below):

  • apple juice
  • spinach
  • frozen pineapple
  • banana
  • kiwi
  • (optional) greek yogurt

This smoothie is so quick and easy.  It’s great for those busy mornings or as an after-school snack.  All you need are the ingredients above and a blender.  I have a Blendtec and absolutely love it!  If you’re in the market for a new blender, you can check them out here.  They’re a little on the pricey side but so worth the money.

You can throw all the ingredients in together and blend.  That’s it!  It really only takes a few minutes to make.

Easy Kiwi, Pineapple, Spinach Green Smoothie

Yield: 16 oz
Prep Time: 3 minutes
Additional Time: 2 minutes
Total Time: 5 minutes

This easy green smoothie is filled with nutrient-rich kiwi, pineapple, spinach, and banana and is ready in less than 5 minutes.  Add an extra veggie boost to your morning without sacrificing flavor.

Ingredients

  • 2 oz frozen pineapple chunks, about 1/3 cup
  • 1 oz spinach, about 1 cup packed
  • 2 oz kiwi, about 1 kiwi
  • 2 oz banana, 1 small, frozen preferred
  • 8 oz apple juice, 1 cup

Instructions

  1. Place all ingredients in blender.  Blend for 45 seconds to 2 minutes until smooth.  Enjoy!

Notes

Add 4 oz (or 1/2 cup) plain or vanilla greek yogurt for added tartness, protein or to make this smoothie creamy.  This will increase the overall yield to 20 oz or so.
