CAN THIS WHITE CHICKEN CHILI BE MADE IN A CROCKPOT ON THE STOVE TOP?
Yes, this recipe can be made in an Instant Pot, crockpot, or on the stove top. The process is the same for the Instant Pot and stove top. To make this white chicken chili in a crockpot, add all the ingredients to a crockpot and cook on HIGH for 4-4 1/2 hours or LOW for 5-6 hours. I like using the Instant Pot saute mode because this chili cooks quickly and the Instant Pot stainless steel pot is really easy to clean.WHAT KIND OF CHICKEN SHOULD I USE IN THIS WHITE CHICKEN CHILI?
This recipe calls for 3 to 3 1/2 cups COOKED shredded chicken. To make this recipe even faster, I use precooked or canned chicken. Chicken breast is easy to can and a great pantry staple to have on hand for those busy nights. Canned or precooked chicken eliminate cook time for meat and is great to use in soups, salads (like chicken salad), sandwiches, or tacos. You can purchase a rotisserie chicken already cooked, remove the meat (usually about 3-4 cups of chicken). This is a convenient method as you don’t have to can, buy canned or cook fresh raw chicken. It does require you to stop by the store to pick it up and usually costs more money than home canned. The cost of a whole rotisserie chicken can range from $5 (Costco, Sam’s Club, Winco) to $10 from other grocery stores. Last option, if you don’t have cooked chicken and don’t want to buy a rotisserie chicken, you can use fresh chicken breasts (about 1 1/2 to 2 lbs or 2-3 breasts). You’ll cook the chicken in the onion garlic broth before adding the beans. Cutting the chicken breasts in half will cut down on cook time but this method will add 15-30 minutes on this recipe’s cook time. Once the chicken is done, remove it from the onion garlic broth. Allow the chicken to cool for at least 5 minutes to give the chicken juices time to disperse. Shred the chicken then add it back into the broth along with the beans. This Instant Pot White Chicken Chili has so many benefits including it’s amazing taste and heartiness but one of the best things about it is how cheap you can make a pot full for! This recipe is awesome for those busy nights and can be ready in about 25 minutes. It has great flavor and has become a family pantry special (a recipe I can make with most of the ingredients waiting in my pantry). Prices of supplies may vary depending on location and store you purchase groceries from. I shop bulk food stores, use coupons, watch ads and shop sales (like case lot), buy supplies in bulk to save on cost and use homegrown produce and herbs when available. Ingredients
- 2 Tbs oil
- 1 medium onion, chopped
- 6 cloves garlic, minced
- 2 Tbs cumin, ground
- 1 tsp oregano, ground or 1/2 Tbs leaves
- 1/2 tsp pepper
- 1 tsp salt
- 1 7 oz can green chilies, canned chopped
- 6 cups chicken broth, or bouillon and water
- 3 15 oz cans white beans, or 3 pints home-canned about 5-6 cups
- 3- 3 1/2 cups chicken, cooked and shredded
- 2 cups green enchilada sauce, 1 15-20 oz can or 1 pint homemade
- sour cream, cilantro, sliced jalapeno, or chips, serve on the side
Instructions
- Set Instant Pot to saute. Add oil, onions, and garlic. Saute 1-2 minute then add spices (salt, pepper, cumin, oregano) and stir.
- Add remaining ingredients and stir.
- Simmer for 10-20 minutes. Stir occasionally.
- Serve with sour cream, cilantro, and chips if desired.
