Mint Marshmallow Chocolate Cookies

Mint Marshmallow Chocolate Cookies have a soft brownie-like chocolate exterior with a mint marshmallow surprise inside.  They are full of soft, chewy cookie goodness and bake up in 5 minutes or less.  Whether you make yours with these homemade mint marshmallows or store-bought, you will fall in love at first bite!

Let me tell you a story.  Once upon a time a homemade peppermint marshmallow and a chocolate cookie fell in love.  So in love, they never wanted to be apart again so they got married.  A while later they had a baby… a beautiful chocolate cookie with a homemade peppermint marshmallow inside.  These mint marshmallow chocolate cookies are seriously the makings of a match made in heaven.

In all seriousness, these marshmallow-filled chocolate cookies are so amazing.  As these cookies bake (super fast by the way), the minty marshmallow center becomes soft and the mint permeates the chocolate cookie.  These cookies are extremely soft when they are hot from the oven but as they cool the marshmallow resets.  It turns the ooey, gooey cookie into a deliciously soft, chewy cookie.

If you’re looking for a unique quick cookie that tastes amazing and you can make it ahead of time, these marshmallow chocolate cookies are it.  I think they’re actually better after they cool and set.

The other thing I love about these cookies is how fast they are to make.  Clearly, if you go the homemade marshmallow route it will add time because you’ll need to make the marshmallow (which is actually extremely easy- you can see how I make mine here).  You can have a batch of these made and baked in 20-30 minutes.  They only take about 5 minutes to make.

Here’s how I do it.  I start by creaming the butter and sugars together, then add the egg and vanilla.

Once they are blended, I add the dry ingredients which include flour, cocoa powder, salt, and baking soda.  That’s it for the chocolate cookies.

Now for the surprise part.  This recipe makes about 30 cookies when the chocolate cookie dough is portioned out into about 1 tablespoon balls.  I love using my 1 tablespoon portion scoop (size 70).  You can find one here.  Next, I flatten the cookie dough out in my hand, add a marshmallow, then seal it completely.  If it’s not completely sealed the marshmallow may ooze out.  In essence, the “surprise” may spill.

Once I have the marshmallow completely covered and sealed I roll the mint marshmallow cookie in sugar and place it on a cookie sheet.  You can fit 15 cookies per sheet if you’d like to avoid having to cook a 3rd pan full as this recipe will make 30 cookies.

Next, these little babies are ready for the oven.  With the center of these cookies being a marshmallow, you can imagine what will happen if they are overcooked.  Marshmallows are basically whipped sugar with a little gelatin in then to help them set.  When sugar, or gelatin for that matter, gets hot it melts.  These cookies bake extremely fast because of that.  They are baked at 400 degrees Fahrenheit for only 4 1/2 to 5 minutes. Seriously!

I set a timer every time otherwise they go from perfect plump marshmallow cookies to flat chewy chocolate puddles in 15 to 30 seconds.  Just saying, it’s worth watching them like a hawk because everyone that tries them will then devour them like a hawk. 😉

I actually overcooked my second batch because I was occupied helping a kiddo. Haha.  You can see them in the background of this picture.  The cookies in focus are what you’re going for. That happens in 4 1/2 to 5 minutes in the oven.  The cookies in the back literally were in the oven for 5 1/2 minutes or so.  Thankfully they still taste great if that happens.

That’s it guys!  These surprise Mint Marshmallow Chocolate Cookies have become a family favorite.  The chocolate cookie paired with a gooey peppermint marshmallow really is fantastic.  If you don’t have time to make these homemade peppermint marshmallows or can’t find peppermint marshmallows at your store, you can use whatever kind of marshmallow you like.  If you use regular marshmallows, make sure you cut them in half otherwise they will be too big.

Mint Marshmallow Chocolate Cookies have a soft brownie-like chocolate exterior with a mint marshmallow surprise inside. They bake up in 5 minutes or less.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup white sugar, plus 1/4 cup for rolling
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup plus 2 Tbsp flour
  • 30 peppermint marshmallows, 1/2" to 3/4" cubes or half a regular marshmallow

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cream butter, brown sugar, and white sugar together.  Add egg and vanilla. Mix until incorporated.
  3. Add dry ingredients (cocoa powder, salt, baking soda, flour).  Mix until just blended.
  4. Scoop dough into 1 tablespoon portions.  I love using my size 70 scoop.
  5. Flatten dough into a circle.  Place marshmallow in center and form dough around marshmallow.  Make sure marshmallow is fully sealed or it will ooze out when baked.
  6. Roll in sugar and place on cookie sheet lined with parchment paper or a silicone mat (up to 15 per sheet).
  7. Bake for 4 1/2 to 5 minutes.  Do not overbake or marshmallow will melt or ooze out of cookie.  Let cool and enjoy.

Notes

  1. If using homemade peppermint marshmallow recipe, you will only need about 1/3 of the batch.  Try dipping the rest of the marshmallows in chocolate... it's amazing!
  2. When baking the second batch, I lessen the time by about 15 seconds due to the baking sheet already being hot.
