Ingredients

Cookies

  • 1/2 cup sugar
  • 1/3 cup coconut oil, melted
  • 1 Tablespoon lime juice
  • 1 Tablespoon lime zest
  • 1/2 teaspoon coconut extract
  • 2 eggs
  • 1 1/2 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup toasted coconut, separated 1/4 for topping

Lime Glaze

  • 3/4 cup powdered sugar
  • 1 Tablespoon lime juice
  • 1 Tablespoon lime zest
  • 1/2 Tablespoon milk

Instructions

Cookies

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, add sugar, melted coconut oil, lime juice, lime zest, coconut extract, and eggs.
  3. Add flour, baking powder, salt and toasted coconut.
  4. Scoop 1-inch balls of dough onto cookie sheet lined with parchment paper or a silicone baking mat.
  5. Bake cookies at 350 degrees for 8-10 minutes or until the middle of the cookie springs back and the bottoms begin to brown.

Lime Glaze

  1. Blend powdered sugar, lime juice, and lime zest together. Add milk and mix until blended.
  2. Dip top of cooled cookie into glaze then sprinkle with remaining toasted coconut.
