Blackberry Lemonade Popsicles

Refreshing homemade blackberry lemonade popsicles filled with fresh-squeezed lemonade and blackberries. A delicious icy treat to enjoy year-round.

Ingredients
  

  • 1 cup lemon juice freshly squeezed is best (about 1lb of lemons)
  • 1 cup sugar or 1/2-3/4 cup raw honey
  • 3 cups water
  • 1 cup ice cubes
  • 6-12 oz fresh blackberries frozen can also be used

Method
 

  1. Place lemon juice, water, and sugar in blender.  Blend for 30 seconds to 1 minute to mix and dissolve sugar.
  2. Add ice and blackberries. Blend for an additional 15-30 seconds. Blackberry pieces should be small enough to fit through funnel into popsicle molds or bags.
  3. Pour into popsicle molds or otter pop bags. Make sure to leave 1/2 inch of room at the top of the bag to avoid spilling when zipped.
  4. Freeze for 3-6 hours or until frozen solid.

Notes

If blender is large enough, all the water can be added and stirred in blender.
