Chocolate-Covered Banana Popsicles

Made with fresh bananas glazed with a thin layer of chocolate. An easy, healthy 3-ingredient frozen banana treat.

Ingredients
  

  • 6-7 bananas peak ripeness, about 2 1/2 to 3 lbs
  • 12 oz chocolate chips dark milk or semi sweet-whichever you prefer
  • 1/2 cup coconut oil or 1 cup cream if you desire a softer chocolate shell

Method
 

  1. Peel bananas, cut away any bruises. Puree using a food processor or blender.
  2. Fill each mold with banana puree. Fill to 1/4 inch from the top to allow room for stick and expanding during freezing. Place lid on molds, insert sticks. Make sure sticks are straight in each cup (this helps when removing the lid after they are frozen).
  3. Freeze for 2-4 hours or overnight.
  4. When ready, melt chocolate and coconut oil in the microwave (30 seconds at a time, stir in between). This should only 1 to 1 1/2 minutes.
  5. Remove each popsicle from it's mold. Dip in chocolate and tap to remove excess chocolate. Let chocolate harden before placing in a bag and back in freezer or enjoy immediately.

Notes

  • This recipe has been designed to make 10-3oz banana popsicles that are dipped in chocolate. If using a popsicle mold that is bigger or small than 3oz cups, this recipe will need to be adjusted.
  • If using cream, heat as directed. Stir chocolate until the cream is fully mixed in. This can take 1 to 2 minutes.
