Ingredients
- 1 cup butter unsalted and softened, 225g
- 2 cups sugar 400g
- 4 eggs
- 4 cups all-purpose flour 480g
- 2 teaspoons baking soda
- 1 teaspoon salt
- 5-6 ripe bananas about 7-8 inches each, mashed
- 2 1/2 cups frosting if desired *Cream Cheese Frosting Recipe in Notes*
Method
- Preheat the oven to 350°F. Prepare a cookie sheet with parchment paper or spray with nonstick spray.
- In a large bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
- Add eggs one at a time until fully incorporated.
- In a separate bowl blend flour, baking soda and salt together.
- Add half the mashed bananas and half the flour mixture to the sugar mixture. Mix only until the dry ingredients are incorporated.
- Add the remaining banana and flour mixture to the sugar mixture. Mix only until dry ingredients are mixed in.
- Pour batter onto prepared cookie sheet. Spread until level. Bake at 350°F for 30 minutes or until a toothpick in the center comes out clean.
- Let the cake cool completely before frosting. Frost if desired.

- 2 cups powdered sugar
- 1 Tablespoon vanilla extra
