Ingredients
  

  • 1 cup butter unsalted and softened, 225g
  • 2 cups sugar 400g
  • 4 eggs
  • 4 cups all-purpose flour 480g
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 5-6 ripe bananas about 7-8 inches each, mashed
  • 2 1/2 cups frosting if desired *Cream Cheese Frosting Recipe in Notes*

Method
 

  1. Preheat the oven to 350°F. Prepare a cookie sheet with parchment paper or spray with nonstick spray.
  2. In a large bowl, cream together butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time until fully incorporated.
  4. In a separate bowl blend flour, baking soda and salt together.
  5. Add half the mashed bananas and half the flour mixture to the sugar mixture. Mix only until the dry ingredients are incorporated.
  6. Add the remaining banana and flour mixture to the sugar mixture. Mix only until dry ingredients are mixed in.
  7. Pour batter onto prepared cookie sheet. Spread until level. Bake at 350°F for 30 minutes or until a toothpick in the center comes out clean.
  8. Let the cake cool completely before frosting. Frost if desired.

Notes

Cream Cheese Frosting Recipe:
  • 1/2 cup butter, softened
  • 8oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 Tablespoon vanilla extra
Cream butter and cream cheese together until smooth. Add vanilla then slowly add powdered sugar until fully incorparated. Carefully spread over cooled cake. Recipe will yield about 2 1/2 cups frosting.
