Ingredients
- 1 cup Mirin
- 1 cup Japanese Sake
- 1 cup Tamari
- 2/3 cup Monk fruit sugar zero calorie sweetener
Method
- In a 2 quart sauce pan add all ingredients. Stir or whisk to combine. Bring to a boil.
- Set heat to medium high and let simmer until sauce as reduced by half, stirring occasionally. This can take up to 30 minutes.
- Remove from heat. use immediately or store in a jar with a lid in the fridge for up to 1 month.
Notes
It is normal to see some crystals form during storage. To dissolve you can reheat sauce using the stove or microwave.
This sauce can be thickened with a cornstarch slurry (1 Tablespoon cold water to 1 tablespoon cornstarch). Whisk into sauce when boiling. Allow the mixture to boil for 1 minute before removing from the heat. This method is great if you plan on using this sauce to serve with grilled chicken or as a topping.
We like to cook cubed chicken thighs in this sauce (without using a slurry). We allow the sauce to reduce, thicken and become very dark while cooking the chicken in it. See Teriyaki Chicken Bowls recipe.
