Ingredients
- 1 1/2 cups flour
- 3 Tbs sugar
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1/4 cup oil
- 1 cup buttermilk can also use 1 cup milk + 1 Tbp vinegar to substitute for buttermilk)
- 1/4 cup Valentine's M&Ms red, white and pink
Method
- Preheat oven to 350°F.
- In mixing bowl, blend, dry ingredients (flour, sugar, baking powder, baking soda, and salt).
- Add egg, oil and buttermilk. Mix until incorporated. Will have some small lumps. Don't over mix.
- Using a GREASED (spray with non-stick spray) 24 count MINI muffin tin, fill each cup 2/3 full.
- Add 3-4 M&Ms to the top of each.
- Bake for 10-12 minutes until pancake bites are fully cooked (should spring back when tops are lightly pressed down or when toothpick comes out clean).
- Serve hot with or without syrup.

Notes
I usually end up with a little extra batter, maybe 1/2 cup or less. Being a person that doesn't like to be wasteful I like to make a quick microwave mug pancake with the leftover. It's super simple. Grease a ceramic or glass mug (about 8oz size). Sprinkle with cinnamon sugar. Add batter. Top with a sprinkle of cinnamon sugar then microwave for 60-75 seconds or until the mug pancake is done.
