Valentine's Pancake Bites

Mini buttermilk pancake balls topped with red, white and pink Valentine's M&Ms.  Easy, baked pancake bites in under 15 minutes.

Ingredients
  

  • 1 1/2 cups flour
  • 3 Tbs sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/4 cup oil
  • 1 cup buttermilk can also use 1 cup milk + 1 Tbp vinegar to substitute for buttermilk)
  • 1/4 cup Valentine's M&Ms red, white and pink

Method
 

  1. Preheat oven to 350°F.
  2. In mixing bowl, blend, dry ingredients (flour, sugar, baking powder, baking soda, and salt).
  3. Add egg, oil and buttermilk. Mix until incorporated. Will have some small lumps. Don't over mix.
  4. Using a GREASED (spray with non-stick spray) 24 count MINI muffin tin, fill each cup 2/3 full.
  5. Add 3-4 M&Ms to the top of each.
  6. Bake for 10-12 minutes until pancake bites are fully cooked (should spring back when tops are lightly pressed down or when toothpick comes out clean).
  7. Serve hot with or without syrup.

Notes

I usually end up with a little extra batter, maybe 1/2 cup or less. Being a person that doesn't like to be wasteful I like to make a quick microwave mug pancake with the leftover. It's super simple. Grease a ceramic or glass mug (about 8oz size). Sprinkle with cinnamon sugar. Add batter. Top with a sprinkle of cinnamon sugar then microwave for 60-75 seconds or until the mug pancake is done.
