Walnut Applesauce Cookies

These Walnut Applesauce Cookies are perfectly spiced, moist, cake-like cookies filled with chunks of walnuts and a hint of fall spices.

Ingredients
  

  • 1 cup shortening
  • 2 cups sugar
  • 2 eggs
  • 2 cups applesauce
  • 1 tsp vanilla
  • 4 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground cloves
  • 2 cup walnuts chopped plus additional for top of cookie

Method
 

  1. Preheat oven to 375 degrees F.
  2. Cream wet ingredients (shortening, eggs, applesauce, vanilla) and sugar together.
  3. Add dry ingredients (flour, baking soda, salt, spices).
  4. Fold in walnuts.
  5. Using a scoop (I like to use a #40 scoop like this one. It's about 1 3/4 Tablespoons) to portion cookies. Place on parchment-lined cookie sheet.
  6. Top each cookie with a few walnut pieces (optional).
  7. Bake at 375 degrees F. for 10-11 minutes until lightly golden brown on top and around edges.
  8. Let cool on cookie sheet for a couple minutes before moving to wire rack. Enjoy!

Notes

If making smaller cookies, adjust bake time. smaller cookies will bake faster.
