Ingredients
- 4 small zucchini cut into spears
- 1/4 cup butter melted
- 1-2 cloves garlic minced
- 5 basil leaves chopped
- 1/2 cup parmesan
- salt & pepper to taste
Method
- Preheat oven to 375°F.
- Cut zucchini lengthwise in half than in half again to make spears.
- Place zucchini spears in a 9x13 baking dish
- In a small bowl, add the melted butter, minced garlic and chopped basil. Stir and pour over zucchini spears then toss to coat.
- Sprinkle parmesan cheese over coated zucchini spears. Add a sprinkle of salt and pepper.
- Bake at 375°F for 20 minutes or until golden brown and crispy.

Notes
No fresh herbs? No problem. You can substitute 1/4 teaspoon garlic powder for fresh garlic and 1 tablespoon dried basil leaves for fresh basil.
