Basil Parm Zucchini Spears

Ingredients
  

  • 4 small zucchini cut into spears
  • 1/4 cup butter melted
  • 1-2 cloves garlic minced
  • 5 basil leaves chopped
  • 1/2 cup parmesan
  • salt & pepper to taste

Method
 

  1. Preheat oven to 375°F.
  2. Cut zucchini lengthwise in half than in half again to make spears.
  3. Place zucchini spears in a 9x13 baking dish
  4. In a small bowl, add the melted butter, minced garlic and chopped basil. Stir and pour over zucchini spears then toss to coat.
  5. Sprinkle parmesan cheese over coated zucchini spears. Add a sprinkle of salt and pepper.
  6. Bake at 375°F for 20 minutes or until golden brown and crispy.

Notes

No fresh herbs? No problem. You can substitute 1/4 teaspoon garlic powder for fresh garlic and 1 tablespoon dried basil leaves for fresh basil.
