Basil, Garlic, Parmesan Zucchini Spears

Do you like zucchini?  If you do great!  If you don’t, you might change your mind after trying these bad boys.  These Basil, Garlic, Parmesan Zucchini Spears are so delicious.  With the flavor party they bring to your mouth you will forget these babies are zucchini (thus “healthy” in my book).  They are crispy and savory with a fresh garlic-y basil flavor perfect to pair with your next dinner adventure.  Trust me, they’re a must try!

These zucchini spears are so simple to make. They are the perfect side dish or snack on a summer’s day. Here’s what you’ll need.

Pretty simple, right?  You will start with 4 small zucchini. Cut the zucchini into long spears.

Melt a 1/4 cup of butter.  Add garlic and basil into the butter.  Put the zucchini into your baking pan (I used a 9×13 pan).  Drizzle butter mixture over the zucchini and toss lightly until coated.  Sprinkle (heavily) with the Parmesan cheese.  Salt and pepper to taste.  Bake at 375 degrees for 20 minutes.  Serve hot.  These babies can stand on their own but they are also delicious dipped into marinara sauce.
