These zucchini spears are so simple to make. They are the perfect side dish or snack on a summer’s day. Here’s what you’ll need.
Ingredients Needed:
- zucchini
- butter
- garlic
- basil
- parmesan
- salt and pepper
Making Parmesan Zucchini Spears:
Start with 4 small zucchini. Snip the ends off and cut the zucchini into long spears.
Next, in a microwave safe bowl, melt the butter. Add garlic and basil into the butter.
Place the zucchini into your baking pan (I used a 9×13 pan which fits this recipe great). Drizzle butter mixture over the zucchini and toss lightly until coated. Sprinkle (heavily) with the Parmesan cheese. Salt and pepper to taste.
Lastly, pop the zucchini spears into a preheated (375 degrees) oven for about 20 minutes. Serve hot. These babies can stand on their own but they are also delicious dipped into marinara sauce or ranch.
