These super easy no-bake cookies are a favorite for my husband.  He will eat an entire batch himself if I let him.

CADBURY EGGS ARE THE BEST!

No surprise here, I’m a bit of a chocoholic which means I could be classified as a Cadbury eggaholic too.

During the Easter season, we always have Cadbury mini eggs in the pantry.  Probably the first signal that I’m a Cadbury eggaholic. 😉

We love no-bake cookies but we especially enjoy these No-Bake Nest Cookies because of those darn Cadbury mini eggs. 

HOW TO MAKE NO-BAKE CHOCOLATE NEST COOKIES:

One of my favorite things about these no-bake oat cookies, other then all the chewy chocolatey goodness, is how fast they come together. 

It only takes about 5 or 10 minutes to make a batch.  If you pop them in the freezer for a quick chill, they’re ready in under 20 minutes.

  1. In a saucepan (at least a 1-quart big saucepan), add all ingredients EXCEPT rolled oats. Bring to a boil. 
  2. Boil for 2 minutes. Remove chocolate mixture from heat.  Add rolled oats.
  3. Scoop or spoon about 1 1/2 tablespoons of oat mixture onto parchment or waxed paper.  Press 2 chocolate mini eggs into the center o each cookie before they set.
  4. Chill in fridge or freezer for about 10 minutes or until cookie has become firm. Store in an airtight bag or container.

This recipe is simple and great to make with kids.

If you’re not feeling the mini eggs (that’s crazy talk in my world) or they’re out of season, you can always omit them.  These chewy chocolate-y no-bake nest cookies are delicious even if the birds fly away and the nest is empty.

This recipe makes about 18 cookies.  It’s a great no-bake cookie recipe to double if you need more than a dozen and a half.

HOW TO AVOID SUGAR CRYSTALLIZATION:

  1. Add 1-2 tablespoons corn syrup.
  2. When boiling, avoid scrap sides as this can cause sugar crystals to stick to the side of the pan and later crystalize mixture.
  3. To help with crystallization, pour mixture over oats in a separate bowl. Don’t scrape sides of the pan.

If crystallization occurs cookies will become grainy and sugar-like.  They will still taste good, the texture will just be different.

  • 1/4 cup milk

  • 36 Cadbury mini eggs
  • 1 tbsp corn syrup, optional, helps to avoid sugar crystallization
