Ingredients
  

  • 1 1/2 cups ham chunked
  • 3 cups red potatoes cubed
  • 4 carrots sliced (about 2 cups)
  • 1 onion diced (about 1 1/2 cups)
  • 3 stalks celery diced (about 1 cup)
  • 6 cups chicken broth
  • 1 cup cream or milk if preferred
  • cornstarch slurry (2 tablespoons cornstarch, 1/4 cup cold water)
  • salt and pepper to taste

Method
 

  1. In large crockpot add ham, potatoes, carrots, onions, celery and chicken broth. Cook on high 3-4 hours (or low for 5-6 hours until veggies and potatoes are tender.
  2. Add cream and cornstarch slurry. Cook an additional 20-30 minutes until broth has thickened.
  3. Salt and pepper to taste.
