A soft, healthy, delicious snack or treat loaded with hazelnuts and homemade Nutella.

Servings: 7 -8 large balls

Ingredients

  • 150 g toasted hazelnuts
  • 150 g pitted dates Medjool preferred
  • 2 Tbs cocao powder or cocoa powder
  • Pinch of salt
  • Nutella amount will vary depending on how large the balls are.

Method

  1. Using a food processor or blender, mix dates, cocao powder salt and half of the hazelnuts. Blend until fully mixed.
  2. Next, add remaining hazelnuts. Pulse until hazelnuts are coarsely chopped. This will give the chewy date mixture a little crunch. You should end up with a soft dough. Cover the mixture and place in the fridge to chill out for 20-30 minutes.
  3. Also, place the Nutella in the fridge or freezer to firm up. This step will make filling the balls much easier.
  4. Once chilled, take 2-3 tablespoons of the date mixture. Flatten into a pancake shape then make a small cup-like shape.
  5. Fill cup 2/3 full with Nutella, I love using this homemade Nutella recipe HERE. Carefully close opening. Roll and enjoy or store in fridge until ready to eat.

Notes

You can make 12-14 smaller balls but the smaller you go the harder it is to fill and seal.
