Strawberry Daiquiri Popsicles

Strawberry Daiquiri Popsicles burst with sweet strawberry and fresh lime flavor—a frosty, tropical treat perfect for summer.

Ingredients
  

  • 2 –3 limes peeled (buy about ⅓–½ lb)
  • 3 cups frozen strawberries about 14 oz
  • 1 cup water
  • cup sugar

Method
 

  1. In a strong blender, add water, sugar, and peeled limes. Blend until completely smooth to help dissolve the sugar.
  2. Add frozen strawberries and blend again until the mixture is smooth.
  3. Pour the daiquiri mixture into popsicle molds, leaving ¼ to ½ inch of headspace at the top to allow for expansion.
  4. Add lids and sticks, then place in the freezer for at least 6 hours, preferably overnight.
  5. Once frozen solid, unmold, bag, and store in the freezer.

Notes

  • Keep frozen until ready to serve. Popsicles stay fresh in the freezer for over 3 months.
  • Popsicle mold sizes vary. This recipe makes about 3½ cups of daiquiri mix, which will yield around around 10 pops in the mold style I have.
  • Extra mixture? Pour into a glass over ice and enjoy it as a drink!
  • For an adult version, replace up to ¾ cup of the water with light rum. Keep in mind alcohol lowers the freezing point, so freeze time may increase.
