Making these fun, colorful, YUMMY red, white, and blue dipped blueberries is a great way to show some USA spirit and enjoy a treat that’s “healthy.” It’s made with blueberries so that makes it healthy, right? *wink*
If June’s flown by as fast for you as it has us, you have to try this recipe soon. It’s super fun, easy and so delicious. My kids LOVE them! Might I add, everyone will have a popping party in their mouth when they take that first bite!
MAKING YOUR DIPPED BLUEBERRIES *POP*:
When I said it will make a popping party in your mouth I meant that literally! These little babies are made with fresh blueberries, white chocolate and… drum roll please… POP ROCKS!
Do you remember those little grains of colorful sugary sweetness that popped and fizzled in your mouth the second they hit your tongue?
I hadn’t had them since I was a kid. When I got this idea for these dipped blueberries for Independence Day I had to give Pop Rocks another try and add some crackle to this fun treat.
Needless to say, that crackle pop in my mouth brought back some fun memories. After we made a batch of these dipped blueberry crackle pops, I tried one.
It was a party in my mouth!
Seriously!
You will be the coolest person at the party because you’ll bring the party!!
The pop rocks on these dipped blueberries make for a one-of-a-kind experience and truly unforgettable (in a very good way).
Don’t let their small appearance deceive you. This 4th of July treat will bring the fireworks to your mouth and everyone that tries them.
HOW TO MAKE DIPPED BLUEBERRIES THAT POP:
These dipped blueberries only take about 30 minutes to make.
The bottom red blueberry layer is my favorite and you already know why. It’s where the crackling pop surprise is.
Let’s start with the ingredients. You can find the full printable recipe below.
All you need are 4 ingredients! (Plus the toothpicks, of course).
Red Pop Rocks are actually kind of pink/orange so we decided to mix them with red sugar sprinkles.
The steps to making these are pretty simple.
Using a toothpick, skewer 3 blueberries (of similar sizes) onto the toothpick. Dip the bottom two blueberries into the white chocolate. Tap to remove any extra white chocolate.
Carefully dip the bottom chocolate covered blueberry into the sprinkles Pop Rocks mixture. Set aside to harden.
You can let them harden standing straight up or lay them on their side.
My girls loved helping me skewer the blueberries and dip them in the white chocolate.
Surprise, surprise… their favorite part was eating the final popping treat. Then again, who wouldn’t!
Pretty easy, right?
Even the “anti-baker” can make a few of these and everyone will love them.
You can serve these little dipped blueberry treats with some Pop Rock candy packs insight or let your guests be surprised.
Personally, I like to see the shock and surprise on my friend’s and family’s faces when they eat their first one.
Just plan to keep them in the fridge until you serve them to keep the fruit fresh and the chocolate solid.

Red, White and Blue Dipped Blueberries
Delicious blueberries dipped in creamy white chocolate then rolled in red pop rocks for a crackling surprise perfect for any Independence Day celebrations!
Ingredients
- 1/2-2/3 cup white chocolate, melted (white chocolate chips or candy coating work great)
- 6 oz blueberries, rinsed and dried
- 1 1/2 tbsp red sugar sprinkles
- 1 1/2 tbsp red Pop Rocks, 1-2 packs
- toothpicks
Instructions
- Mix red sugar sprinkles and red Pop Rocks together in a small bowl. Set aside.
- On toothpicks, skewer 3 similar sized blueberries.
- Dip bottom two berries into the white chocolate until coated. Tap to remove excess.
- Carefully coat bottom chocolate covered berry into Pop Rocks/red sprinkles mixture.
- Stand up or lay down on wax paper to harden.
- Refrigerate until ready to serve.
