These Graham Cracker S’mores Cookies with Jet-Puffed Mallow Bits are the perfect way to enjoy those classic s’mores flavors without the campfire. They are delicious and filled with graham cracker, mini marshmallow bits, and chocolate chips.
Summer is HERE! Okay, not officially until the 20th but close enough. The weather is warm and beautiful. The days are getting longer. The camping itch is everywhere.
When we go camping or make a backyard fire in the firepit, one of our favorite treats to make are s’mores. An ooey, gooey marshmallow smashed against a chunk of chocolate and sandwiched between two pieces of graham cracker. The flavors are awesome but the smokey campfire and hot sticks are not my favorite parts, especially with small children around.
If you have the same thoughts, there’s no need to deprive yourself of the wonderful sweet flavors of s’mores. With these cookies, you will be able to bring the outdoors right in. No campfire needed, no smoke allowed, no hot sticks. Only sweet s’mores flavors packed in these delicious graham cracker s’mores cookies. We’re even passing on the ooey, gooey marshmallow hands by using Kraft Jet-Puffed Mallow Bits.
This is what I started with (minus the mallow bits and chocolate):
These s’mores cookies are pretty straight forward. I started by crushing the sleeve of graham crackers then set them aside. Next, I creamed the butter and sugar together. Once the mixture was creamy and fluffy, I added the eggs.
After the eggs were all mixed in, I added the vanilla extract and dry ingredients (flour, crushed graham crackers, salt, and baking soda).
Once those were added I only mixed the dough until the dry ingredients were just incorporated. The best is saved for last. In goes the Jet-Puffed Mallow Bits and chocolate chips. I have the dough one more quick mix and the s’mores cookie dough was done.
I baked these sweet s’mores cookies in a 350 degree F oven for about 8-9 minutes until the cookie edges just began to brown. Right after pulling them from the oven, I taped them down on the counter to release any additional air in the cookie. This helps keep the cookie chewy and moist.
You can enjoy these with a glass of milk right from the sheet. That’s how we do it. 😉
It doesn’t take a smokey campfire, hot sticks, and sticky marshmallows to enjoy s’mores. These easy s’mores cookies are your ticket and your family will love them.
