It has been a long couple of weeks with sickness in our home yet again. I’ve been down right out of it with the bug that has plagued my body. I feel like I have a parisite or something. Ugh! So please accept my apologies for the delay of this recipe. I know I was hoping to get it up much sooner as you may have seen in my last cupcake post a few weeks ago, The Best Andes Mint Chocolate Cupcakes.
I’m still not 100% but definitely doing a bit better. I’m grateful I’m feeling well enough to get this post up for you guys. 🙂
If you are having a day or week like I’ve had recently, these cupcakes are sure to cheer you right up. They are so delicious! The cupcake itself is amazing but then you top it off with airy chocolate mousse (that is INCREDIBLY simple to make) and a sprinkle of mini chocolate chips. It is a true chocolate heaven!

Haha. Seriously though! This mousse is one of our favorite go-to deeeee-lishous treats we make on a regular basis. We love it plain jane, as a dip for strawberries, on cakes, cupcakes, and even as a filling like in my Inside Out Mini Chocolate Eclairs.
With this mousse being so light, you can put a swirling mound on top of these cupcakes without getting that tooth-wrenching sweet buzz a traditional chocolate buttercream gives you.
