This perfect-for-summer salad is full of fresh broccoli, bacon bits, onion, seeds, dried cranberries and dressing that is so good you’ll wanna lick the bowl when it’s gone! 

If you need a perfect salad this summer (or really any time), this is it! It’s so delicious!

This is one of my favorite summer salads to take to family gatherings or BBQs.  It’s always one of the first salads to be gobbled up.  

SUPERFOODS AND BROCCOLI:

This easy salad is filled with so many superfoods like pumpkin or sunflower seeds and dried cranberries.

I say it’s a “healthy” salad with its fresh broccoli and superfoods but really, I love it because it tastes amazing. Probably because of the yummy salty bacon crumbles and creamy amazingly delicious dressing.  😉

EVERYONE LOVES IT!

My brother-in-law requested this salad at his birthday bash potluck over Raspberry Delight Cups.

This seriously is an easy super delicious salad is always a hit with everyone!

BROCCOLI SALAD VARIATIONS:

There are lots of variations to this salad.  I’ve seen some with apples added or minus the bacon or seeds.  

When it comes down to it… this is the best most simple creamy fresh broccoli salad out there. If you have bacon on hand add it. If you don’t, no worries, omit it. What to add extra craisins? Do it!

HOW TO MAKE EASY BROCCOLI SALAD:

Here’s where I start.  Broccoli, red onion, and Salad Topper mix by NaturSource (pumpkin seeds, sunflower seeds, dried cranberries).  If you can’t find this mix feel free to add whatever you seeds and small dried fruit you have on hand.

A note on the Salad Topper.  This product at Costco last year and decided to give it a try.  I’ve fallen hard for it as the blend of seeds and fruit are perfect for this salad and snacking.  

I usually stick with plain toasted salted sunflower seeds but the pumpkin and dried cranberry add so much.  It’s great to have all three especially when they come altogether in one bag.  If you’d like to try it for yourself, you can find the Salad Topper here.

Once the bacon is cooked and crumbled, onion minced, and broccoli cut into bite-sized pieces, this salad is ready to assemble.  Whip up the super simple (so delicious) dressing.  

PRO TIP: Mix the dressing first to allow the sugar in the dressing time to dissolve then chopping the other ingredients.

To finish this salad, throw all the ingredients together in a large bowl then pour the dressing over the top.

Give it a quick toss to coat the broccoli and other ingredients and it’s ready to enjoy.  EASY! Right?  

Oh man, you are going to love it.  It’s so delicious!  The dressing is sweet, creamy and tangy. It pairs so well with the crunchy broccoli, salty bacon, and nutty seeds!

That’s pretty much a win, win in my book!

THIS BROCCOLI SALAD CAN BE DOUBLED!

This salad will look gorgeous on any summer table.  

I also like to double this recipe when I take it to a potluck.  When doubled it makes about 14-16 servings.  Our Costco typically carries broccoli crowns in a 3 lb bag.  

I use a bag of broccoli and a pound of bacon when doubling which makes for fewer leftovers that have to be stored in the fridge.

Easy Fresh Broccoli Salad

Yield: 6 -8 servings
Prep Time: 20 minutes
Total Time: 20 minutes

A fresh salad full of fresh broccoli, salty bacon crumbles, savory onion bits, hearty seeds, sweet dried cranberries and dressing in a sweet-tangy (damn delicious) simple dressing.

Ingredients

  • 1 1/2 lbs broccoli crowns, cut into bite-sized pieces
  • 1/2 lb bacon (about 8 slices), cooked and crumbled
  • 1/2-3/4 cup red onion, minced
  • 1/2 cup NaturSource Salad Topper, (1/8 cup of each- sunflower seeds and pumpkin seeds and a 1/4 cup dried cranberries)

Dressing

  • 1 cup mayo
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar

Instructions

For the dressing:

  1. In a bowl or pint size jar, mix mayo, apple cider vinegar, and sugar together.  Set aside until ready to dress salad.

Assemble the salad:

  1. In a large bowl, combine salad ingredients including NaturSource Salad Topper.
  2. Pour dressing over salad ingredients.
  3. Toss thoroughly until broccoli pieces are coated.
  4. Refrigerate until ready to eat.

  1. I think this recipe looks amazing and I can’t wait to try it! I do want to point out that the nutritional information is not accurate. If there are 17 g carbohydrates per serving, 4 g of fiber, and 0 g sugar alcohols then your net carbs would be 13 g.

    I plan to try this recipe but with a sugar substitute, which would then significantly lower the net carbohydrates and make this a keto friendly recipe.
