Need a quick dessert for the dinner table or a holiday party? These Chewy Toffee Brownies are basically your “I totally planned this” dessert, even if you did not.

They start with a simple brownie mix, bake up chewy, and get that sweet caramel-ish crunch from toffee bits on top. Add a cold glass of milk and suddenly you are the hero of dessert time.

Why You’ll Love These

These chewy toffee brownies are a win because they come together fast thanks to a boxed mix shortcut, but still taste like you put in way more effort than you did.

They bake up with that perfectly chewy brownie texture plus a little toffee crunch on top, which makes them extra special.

They are also a total crowd-pleaser for parties, potlucks, and busy weeknights, and you can dress them up in seconds with ice cream, caramel sauce, or a dollop of whipped cream.

Steps to make toffee brownies.
  1. Bake until a toothpick inserted in the center comes out clean.
  2. Cool (or don’t): They’re great warm, but even chewier once fully cooled.

Tips for the Best Chewy Brownies

  • Use a Chocolate Fudge brownie mix.
  • Do not overmix. Stir just until you stop seeing dry mix.
  • Let them cool completely if you want maximum chewiness.
  • Line the pan with parchment (optional) for easy lift-out and cleaner cuts.

Easy Variations

  • Extra fancy: drizzle caramel sauce over cooled brownies.
  • Ice cream night: serve warm squares with vanilla ice cream.
  • Chocolate boost: add chocolate chips along with the toffee chips (optional).

FAQ

Can I use a different brownie mix size?

Yes, but bake time may change. Use the toothpick test and watch closely near the end.

Do these brownies get more chewy later?

Yes. Once fully cooled and rested, the texture gets even better.

What’s the best way to cut clean squares?

Cool completely, then use a sharp knife wiped clean between cuts.

Storage

  • Room temp: Store in an airtight container.
  • Fridge: Also fine, just bring to room temp for best texture.
  • Freezer: Wrap tightly and freeze. Thaw at room temp before serving.

I’ve always thought there were two types of people in the world: those who like cake-y brownies and those who like chewy ones.  Which type are you?

    • Hi Darleene! I’ve never tried this recipe with Butterfinger baking chips but I would think the substitution would be fine. If you try it let me know how it goes. If my grocery store has Butterfinger baking chips I’ll pick some up and try it too. I love butterfingers so naturally it’s safe to say I would love a Butterfinger brownie too. Keep me posted and I’ll do the same.
