Frequently Asked Questions

What’s the difference between cream cheese, Neufchatel, and mascarpone?

Cream cheese is denser and has a higher fat content compared to Neufchatel, which is lighter and lower in fat. Mascarpone, on the other hand, is Italian cream cheese, creamier and richer than the other two.

Why is my frosting lumpy?

Lumps usually happen when the butter and cream cheese aren’t at room temperature or aren’t creamed together enough.

Why is my cream cheese frosting runny?

This can result from over-mixing or not using room temperature ingredients. It is important to cream the cheese and butter together before adding the powdered sugar. This will help you get that smooth creamy frosting without the sugar melting and making it runny. Mix the powdered sugar in just until combined for best results.
