So warm and inviting, these quick and easy Apple Oatmeal Muffins are loaded with heart-healthy oats, chunks of moist apple and bursts of cinnamon sweetness.
What’s even better is these easy breakfast muffins are a great grab-and-go meal for busy mornings and freezer-friendly. Great for meal prep.
There’s a special magic in the combination of cinnamon and apples. Be it pies, cookies, or tarts, if it’s got those flavors, count me in. Inspired by some holiday favorites, I once whipped up sugar-sprinkled Cranberry Oatmeal Muffins. They were fantastic! But then I thought, “Why not twist in some classic cinnamon apple?” And voilà, our Cinnamon Apple Oatmeal Muffins were born—sweet, moist, and perfect for a cozy start.
These muffins vanish faster than you can say “breakfast.” They’re such a hit, it feels like they’re gone in teen speed!
Ingredients Needed:
- dry pancake mix
- quick oats
- baking powder
- eggs
- coconut oil, melted
- milk
- vanilla
- apple chunks
- sugar
- ground cinnamon
- cinnamon chips
- cinnamon sugar for topping, optional

Apple Mix
Begin by stirring half the sugar with all the cinnamon into the chopped apples. Once they’re evenly coated, set them aside—they’re ready for their big batter debut.
Apple Oatmeal Muffin Batter
Start with the dry ingredients—dry pancake mix, oats, and baking powder. Add the eggs, milk, melted coconut oil, and vanilla into the dry mix and stir until just combined.
Then, fold in the cinnamon chips and apple pieces spiced with sugary cinnamon. Your batter is now muffin-ready!
Prepare Muffin Tin
For an easy cleanup, I like using muffin liners. Plus, they come in so many fun colors and designs!
Fill, Sprinkle and Bake
Fill the liners about three-quarters full using a scoop or spoon. I like using D20 size portion scoop.
Sprinkle a dash of cinnamon sugar on top for that lovely sweet crunch.
Bake at 350 degrees for 22-24 minutes, or until a toothpick inserted comes out clean. They come out looking irresistible!
These muffins are ideal for on-the-go mornings or a quick snack. Enjoy them plain or with a touch of butter for extra richness. The tartness of the apples and the warmth of the cinnamon chips mingle perfectly, offering delightful bursts of flavor with each bite.

Apple Oatmeal Muffins
Ingredients
- 1 cup dry pancake mix
- 1 1/4 cups quick oats
- 1 teaspoon baking powder
- 2 eggs
- 1/4 cup coconut oil melted
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 pieces apple peeled and cubed into small
- 1/3 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 cup cinnamon chips
- cinnamon sugar for topping optional
Method
- Preheat oven to 350 degrees.
- Toss apple pieces with sugar and ground cinnamon. Set aside until ready to use.
- In a mixing bowl, blend dry pancake mix, quick oats and baking powder. Add eggs, melted coconut oil, milk and vanilla. Mix until combined.
- Fold apple pieces and cinnamon chips into batter.
- Scoop (D20 sizor spoon batter into muffin tin lined with paper liners.
- Sprinkle about a 1/2 teaspoon of cinnamon sugar onto each muffin.
- Bake at 350 degrees for 22-24 minutes or until a toothpick placed into the center of a muffin comes out clean.
