Easy Cinnamon Apple Streusel Muffins
These delicious Cinnamon Apple Crumb Streusel Muffins have a moist cinnamon apple center with a sweet, crumb-y cinnamon streusel topping, and are ready in 30 minutes or less.
Ingredients
Crumb Streusel Topping
- 1/4 cup cold butter cubed
- 1/4 cup flour
- 1/4 cup oats
- 1/4 cup brown sugar
- 2 tablespoons white sugar
- dash salt
Cinnamon Apples
- 1 cup apples small dice
- 2 tablespoons flour
- 1/4 cup sugar
- 1 tablespoon cinnamon
Main Muffin Batter
- 2 cups pancake mix
- 1/2 cup milk
- 1/4 cup butter melted
- 2 eggs
Method
Crumb Streusel Topping
- In a bowl, mix all crumb streusel topping ingredients together with a fork or pastry cutter. Mix until butter pieces are pea-sized. Set aside until ready to use.
Cinnamon Apples
- In another bowl, toss cinnamon apple ingredients together. Set aside until muffin batter is made.
Muffins
- Blend main muffin batter ingredients together only until combined. It should be lumpy.
- Fold in cinnamon apple mixture only until blended. Do not over mix.
- Fill each muffin cup (I line my tin with paper muffin cups) to about 2/3 full. I like to use a D20 size scoop.
- Sprinkle about 2 tablespoons of the streusel topping mixture on each muffin.
- Bake at 350 degrees F. for 18-20 minutes or until a toothpick poked into the center comes out clean.
- Eat plain or with butter and cinnamon sugar.

I decreased the sugar to one Tbsp and added chopped walnuts in the batter. One large apple is a LOT of apple so the yield was 17 muffins. These are being eaten for breakfast, everyone loves them and I’ll definitely make these again.
Can I replace the brown sugar with regular white sugar in the streusel topping?

Yes you can replace the brown sugar with white. It will alter the flavor slightly but still taste great.
Can these be made with gluten free pancake mix?
I haven’t tried it with a gluten-free pancake mix. If your mix has a 1 to 1 gluten-free to regular pancake mix I would think it would be just fine. Let me know how it goes if you try it. Thanks for stopping by.

These are AWESOME! I followed the recipe as written with the exception of adding
1/4 tsp each of ginger and clove to the apple mixture. I will definitely be baking

Why were mine so disgusting tho ? the flavor was there and good but the consistency of the muffin batter in my mouth was like fluffy , like marshmallows ( I HATE marshmallow) did I do something wrong??
Sandra! That’s a major bummer. I’ve made these several time with now consistency issues. It may be your pancake mix… I use a homemade mix (https://kitchencents.com/fluffy-buttermilk-pancakes/) or Krusteaz brand.
Does it have to be a pancake mix that you only add water or does it not matter?
Hi Rachel! I love your name… 😉 To answer your question, I don’t think it will matter much which kind of pancake mix you use. I’ve made it with a Bisquick (just add water) mix and a pancake mix that required me to add oil, eggs, and milk to make pancakes.
