It’s time to break out the grill and throw some burgers on! Springtime and warmer weather are finally here. Let’s celebrate by throwing a few of these juicy Cheese Stuffed Garlic Red Bell Cheeseburgers on the grill. They are all beef burgers filled with garlic, red bell peppers, fresh cilantro, onions, and stuffed with cheese. They are mouth-watering juicy and sooo flavorful. A must-try when you grill is hot and ready!
We have been waiting six long, cold months for Spring to arrive and the grill to come out. This last weekend was it for us. The weather was beautiful and warm (in the high 60’s). We had family over to celebrate the warmth and let the kids play outside. Juicy cheeseburgers were a must!
No fancy shmanshy grill here. We have a humble firepit grill in our backyard. During the warmer months of the year, we cook right over the fire at least once a week. These juicy cheeseburgers are amazing grilled but if you don’t have a grill, they can also be baked in the oven.
Whenever I make burgers I like to add “flavor boosters” that add deliciousness and moisture. No one likes a dry, flavorless cheeseburger. Yuck! If you follow this recipe, your cheeseburgers will be everything but that!
I tripled this recipe to make enough burgers for our family gathering. Thus the very large amount of cheeseburgers. The printable recipe will yield 4 regular-sized cheeseburgers.
These cheeseburgers are sooo delicious. I started by adding all the ingredients in a bowl (minus the cheese of course). This included 80/20 ground beef, bell pepper, onion, garlic powder, cilantro, crushed croutons eggs, salt, and pepper.
I mixed the burger ingredients until everything was well blended. To make equal patties, you can split the ground beef mixture into 8 equal portions. I just grabbed a small ball of the mixture and went from there when I made mine. They weren’t the most equally potioned but it worked.
Then, I pressed each ball into a patty. Once it was about a 1/2 -inch thick I placed a half slice of cheese in the center. If you like your burgers super cheesified, you could double that. Once the cheese was placed, I took another ball of burger mixture and made a second patty right on top of the cheese. This encasing the cheese between the two layers. I repeated this until I had no burger mixture left. I made 3 batches worth and ended up with 12 cheeseburgers.
These cheese-stuffed, big-boy burgers were ready for the grill. I thought they looked so pretty with the red bell peppers, white onion pieces, and vibrant green cilantro. Yum!
I grilled these juicy cheeseburgers over high (450°F) for about 4-5 minutes per side until the were well-done. If you prefer your burgers to be cooked medium-rare to medium, lessen the cook time by 1-1 1/2 minutes per side. Once they were done, I flipped them one last time and moved them to a cooler place on the grill. I topped each of them with a slice of cheese and allowed the cheese to melt.
If you choose to bake these cheeseburgers, bake at 400 degrees F. for 15-20 minutes or until the internal temperature reaches 160°F. Turn once. Add cheese 1-2 minutes before pulling out to allow it to melt.
