We have been waiting six long, cold months for Spring to arrive and the grill to come out.  This last weekend was it for us.  The weather was beautiful and warm (in the high 60’s).  We had family over to celebrate the warmth and let the kids play outside.  Juicy cheeseburgers were a must!

No fancy-schmancy grill here.  We have a humble firepit grill in our backyard.  During the warmer months of the year, we cook right over the fire at least once a week.  These juicy cheeseburgers are amazing grilled but can also be in the oven.

FLAVOR-PACKED GARLIC CHEESEBURGERS:

Whenever I make burgers I like to add “flavor boosters” that add deliciousness and moisture.  No one likes a dry, flavorless cheeseburger. Right?!  If you follow this recipe, your cheeseburgers will be everything but dry or bland.

I tripled this recipe to make enough burgers for our family gathering.  Thus the very large amount of ground beef mixture.  The printable recipe will yield 4 regular-sized cheeseburgers.

HOW TO MAKE A JUICY, FLAVORFUL BURGER:

These cheeseburgers are sooo delicious.  Started by adding all the ingredients in a bowl (minus the cheese of course).  This included 80/20 ground beef, bell pepper, onion, garlic powder, cilantro, crushed croutons eggs, salt, and pepper.

Mix the burger ingredients together.  To make equal patties, you can split the ground beef mixture into 8 equal portions.

Press each ball into a patty.  Once the patty is about 1/2-inch thick place a half slice (1/2 oz) of cheese in the center.  If you like your burgers super cheesified, you could double that.  Take another ball of burger mixture and made a second patty right on top of the cheese.  This encasing the cheese between the two layers. Repeat until no burger mixture left.  I made 3 batches worth and ended up with 12 cheeseburgers.

Your cheese-stuffed, big-boy burgers are ready for the grill.  I thought they looked so pretty with the red bell peppers, white onion pieces, and vibrant green cilantro.  Yum!

Grill these juicy cheeseburgers over high (450°F) for about 4-5 minutes per side until the were well-done (160 degrees F. internally), or done to your liking. Lessen the cook time by 1-1 1/2 minutes per side for medium to medium-rare doneness.  Top each stuffed burger with sliced cheese and allowed the cheese to melt.

NO GRILL? NO WORRIES, BAKE THEM!

If you choose to bake these cheeseburgers, bake at 400 degrees F. for 15-20 minutes or until the internal temperature reaches 160°F.  Turn once.  Add cheese 1-2 minutes before pulling out to allow it to melt.

Cheese-Stuffed Garlic Cheeseburgers

Ingredients

Cheeseburgers

  • 1 lb 80/20 ground beef, $2.17
  • 1/3 cup red bell pepper, diced small, $0.33
  • 1/3 cup onion, diced small, $0.20
  • 1/4 cup crushed croutons or dry bread crumbs, $0.25
  • 2 eggs, $0.20
  • 2 tablespoons cilantro, rough chop, $0.15
  • 3/4 teaspoon garlic powder, $0.05
  • 1/2 teaspoon salt, $0 had on-hand
  • 1/4 teaspoon pepper, $0 had on-hand
  • 6-8 thin slices cheese, monetary jack, american, cheddar, pepper jack, etc, $2.25

Extras

  • 4 hamburger buns or large lettuce pieces
  • optional toppings, tomato, onion, lettuce, pickle, mayo, mustard, ketchup, etc.

Instructions

  1. In a large mixing bowl, mix all ingredients except cheese.
  2. Split into 8 equal portions and press into patties.
  3. Add a 1/2 to 1 piece of cheese in the center of 4 patties. Make sure it doesn't hang over the side (you want it to seal).  Encase cheese with second patty.  Seal around edges.
  4. Grill on high heat (450 degrees) for 4-5 minutes per side or until burger reaches an internal temperature of 160 degrees.
  5. Flip over and move to cooler part of grill, then top with slice of cheese. Serve.
