No-Bake Snickers Cheesecake Bars

Snickers candy bars are one of my favorites.  The sweet nougat, caramel and salty peanuts all covered in chocolate.  That’s one great flavor combo.  This No-Bake Snickers Cheesecake Bar is exactly that, a great flavor combo, with a cheesecake layer in place of the nougat.  It will please your snicker lover and cheesecake lover.  I’m a huge fan of both.

This no-bake treat is perfect for summer.  I like making these bars any time of year but especially in the summer when turning on the oven is the last thing I want to do.  I can get my sweet treat fix without adding to the heat.

I also like making this in the summer when BBQs and family gatherings are in high volume so I can share.  That might be in part because my husband Ryan won’t come near anything with cheese in it (even cheesecake) and if I make a pan of these sweet Snickers Cheesecake Bars, I will eat them all myself.  😉

This recipe is quick and easy.  No crazy ingredients here and the directions are simple.  I start by having the kiddos help me crush up about a sleeve (8-9 sheets) of graham crackers.  To make for easy cleanup and fewer dishes I mix the graham cracker crust right in the pan.

Once the crust is mixed and pressed into the bottom of the pan I pop it into the fridge to chill out while I make the cheesecake filling.

Cream cheese and powdered sugar into a bowl for a quick mix.  You could add a little vanilla or almond extract if you’d like (about 1 teaspoon).  I like mine without because it lets the tart cream cheese shine through.  Once the cheesecake mixture is blended and smooth I add it to the top of the graham cracker crust.  Once smooth, it’s ready for the caramel layer.

For quick and easy assembly I use caramel squares.  If you have a fabulous caramel recipe you love, you could definitely go homemade.  I typically say homemade is better but if you’re in a time crunch and need a sweet treat fast, pre-made caramel squares are great.  I add cream to the caramel and microwave until melted.  Once the caramel mixture is smooth and cooled slightly it’s poured right over the cheesecake layer.  Then comes the roasted salted peanuts.

Once the peanuts are spread evenly, I add the final touch, chocolate ganache, right on top.  Once it’s smoothed, into the fridge it goes to set.  In about an hour you’ll have a delicious Snickers-filled cheesecake bar to share (or not, if you want to indulge in all of it yourself… I won’t tell 😉 ).

The one thing I do switch up sometimes is the order of layers.  The cheesecake filling is pretty soft and sometimes smooshes out of the sides because the chocolate and caramel are a bit more firm.  You can put the caramel and peanut layers onto of the graham cracker crust then add the cheesecake layer and top it with the chocolate ganache.  Tastes the same but is a little easier to cut.  Either

    Hi Darrell! Great question! Either, cream or heavy whipping cream (18% or 35%) will work. I prefer the higher fat content because it becomes thicker (stiffer) when whipped which is great for no-bake cheesecake. Regular whipping cream will work too if that’s what you have on hand. Half and half will not work as the fat content is too low to whip. I hope this helps and you enjoy this recipe. Thanks for stopping by!
