Strawberry Banana Cream Brownies

These easy-to-make Strawberry Banana Cream Brownies will bring the party to your mouth. Before you brush me off, hear me out. I know what you’re thinking… banana cream pie, strawberries n’ cream, brownies.  What?! It’s true but these brownies are awesome, delicious really. The most important thing is that they taste great, right? These brownies are made with layers of fresh bananas, strawberries, creamy banana cream filling and topped with sweetened whipped cream. If you’re a strawberry banana fan you don’t want to miss this recipe, it’s a good one. With this delicious brownie dessert in hand, you’ll be a rock star at your next gathering when everyone enjoys a slice of this strawberry banana cream heaven.

A few months ago my aunt from Kansas came to stay with us.  She was here visited a couple of her kids that were attending a nearby university. While she was here she shared a unique birthday recipe favorite her family enjoys when they aren’t feeling like a cake.  It was a banana cream pie brownie.  Story goes my cousin couldn’t decide between a banana cream pie or brownies for his birthday so my aunt melded them together.  We tried it the week she was here and loved it. The banana and chocolate were such a great flavor combo but why not add strawberries n’ cream. It took it to a whole other level and was so easy to make.

First up, the ingredients.  No surprises here and you might even have most of them in your pantry or fridge. Here’s what you’ll need minus the brownies, they didn’t make it into the picture.  When making this recipe, I like to use a cake-like brownie instead of a chewy brownie.  Going with a cake brownie helps avoid the soggy factor.  Here’s a recipe for homemade cake brownies or you can make a box brownie (just add an extra egg and an additional 1/4 cup of flour to the batter).

Strawberry Banana Cream Brownies Ingredients

While the brownies are baking start on the cream filling. Check it out, it’s easy and straight forward. Using an electric mixer, hand mixer or a wire whisk if you feel like getting an arm workout, begin whipping the cream.  Once the cream starts to thicken add the powdered sugar.  This will give the whipped cream a hint of sweetness.  Whip the cream until it reaches stiff peaks. Make sure you don’t over whip it or you’ll end up with a bowl of butter. Place the whipped cream in the fridge until later.

Next up is the banana cream.  Yum! Mix the banana cream pudding dry mix into 1 1/2 cups cold milk.  This will become very thick.  That’s just how you want it.  Place it in the fridge for 15-30 minutes to allow it time to set.

Once the pudding has set, stir to break it up.  Fold 1/2 of the whipped cream into to the banana pudding. This will make the banana cream pudding more airy which equals more delicious in my book.

Creamy Banana Cream

Once the brownies have cooled completely it’s time to assemble this creamy dessert.  Slice 3 to 4 bananas and about a pound of strawberries.

Spread a thin layer of banana cream onto the pan of brownies then put a single layer of sliced bananas on top.

Next, cover the bananas with the remainder of the banana cream mixture.  Spread evenly over the brownies and bananas.

Spread out a layer of strawberries on top of the banana cream filling then carefully spread the rest of the sweetened whipped cream over the strawberry layer.

Lastly, add sliced bananas and strawberries on top.  I shaved a bit of chocolate on top and you can do the same if you’d like.

Refrigerate for 1-2 hours to allow the filling to set.  This will help avoid spillage.  You can serve it immediately, but it might just be a little oozy. That’s it!  Easy peezy and so yummy!  I’m so excited for you to try it.
