Ingredients
  

  • 1.75 oz box Sure Jell *Less or No Sugar Needed
  • 1 cup water
  • 4 cups crushed strawberries about 2 lbs
  • 1 2/3 cup Truvia or 40 packets
  • 1 Tablespoon lemon juice fresh is best but bottle will work too

Method
 

  1. Place water and pectin in a small saucepan. Bring to a boil and boil for 1 minute.
  2. Add pectin mixture to sugar substitute and whisk until blended.
  3. In a blender, place whole strawberries that have been rinsed and green tops removed. Pulse until macerated or chopped into small pieces. Confirm you have 4 cups of crushed berries.
  4. Add lemon juice to the berry mixture.
  5. Add the pectin/sugar mixture to the berries. Blend until fully combined (15-30 seconds on stir mode).
  6. Immediately pour jam mixture into sterilized jars or freezer containers. Seal and let sit at room temperature for 24 hours. Then place in the freezer.
