Homemade Egg Noodles

These rustic noodles are perfect to add to your favorite noodle soup or smother in sauce (creamy or marinara).  Homemade Egg Noodles are quick and easy to make and taste delicious.  These tasty noodles make my Homemade Chicken Noodle Soup over the top.

Ingredients Needed:

  • Flour
  • Eggs

How To Make Homemade Egg Noodles:

  1. Add ingredients to the bowl.
    Place all the ingredients in a mixing bowl.
  2. Mix into a dough.
    Stir until everything comes together and forms a dough. It’ll likely be a little sticky and that’s normal.
  3. Flour your workspace.
    Sprinkle flour on the counter. I like using a silicone baking mat because it doesn’t slide around and cleanup is easy.
  4. Knead the dough.
    Turn the dough out onto the floured surface and knead until smooth. If it sticks to your hands, dust in a little more flour as you go.
  5. Let it rest. Place the dough back in a bowl and let it rest for a few minutes. If you skip this, the dough gets elastic and fights you when you try to roll it thin. Divide the dough.
    Split the rested dough into two balls.
  6. Roll it out.
    Roll each ball to about 1/4 to 1/8 inch thick.

  1. Cut into noodles.
    Slice into 1/4-inch wide strips. I usually grab a pizza cutter for this, but a long chef’s knife works too.
  2. Set noodles aside.
    Spread the noodles out on a floured cookie sheet or floured surface until you’re ready to cook them. Try not to stack them so they don’t stick together.

Cook and Serve

  • For soup: Make sure your broth is boiling first, then drop in the noodles. Boil 3 to 5 minutes, or until the noodles float and are tender.
  • For pasta: Boil in salted water, drain, then serve with your favorite sauce.

My Favorite Way To Use Them

These are so good in homemade chicken noodle soup or covered in a delicious garlic butter sauce like in my Browned Garlic Butter Pasta. I’ve loved these noodles since the first time I made them. My mom is a FACS teacher back where I grew up, and this was one of the recipes we got to make in her class. Thanks, Mom, for the recipe I still use all the time.

Ingredients
  

  • 1 1/4 cups flour
  • 2 eggs
  • 1/4 milk
  • 1/2 teaspoon salt

Method
 

  1. Mix all ingredients together until dough forms.
  2. Pour out onto flour-dusted surface and knead until smooth (2-3 minutes). Add additional flour if sticking to hands.
  3. Place in bowl and cover. Let rest for 10 minutes.
  4. Divide in two parts. Roll out to 1/4 to 1/8 inch thick and cut into 1/4 inch wide strips. Place on floured surface until ready to use.
  5. Add raw noodles to boiling soup. Allow them to cook 3-5 minutes until they begin to float.

Notes

If making pasta, boil in 6-8 cups water for 3-5 minutes (until they begin to float). Serve with your choice of sauce.
