HOW MANY NET CARBS ARE IN KETO FLAN?

This Keto flan recipe utilizes sugar substitutes and sugar-free syrup which decreases the carb count compared to a traditional full-sugar recipe. This flan recipe has an estimated 3-4 grams of net carbs per serving. The majority of carbs come from whipping cream and sugar-free syrup.

For anyone watching their carb intake for medical, health or personal reasons, this dessert recipe is a definite win. The rich, creamy texture and sweet flavor are so good others won’t believe this is a low-carb dessert.

MAPLE SYRUP CARAMEL SAUCE:

To make this flan recipe as simple and delicious as possible, I opted for a simple sugar-free maple syrup reduction. Regular sugar-free maple syrup is fairly thin to work as the caramel sauce for flan. To thicken the syrup, heat over medium-high heat until the syrup thickens and reduces by about half.

This will give the syrup stability to hold up to the custard mixture before baking rather than mixing it into the custard when poured into the ramekins.

If you are short on time, you can use sugar-free maple syrup without reducing. Just add 1 tablespoon to each ramekin and pour egg-cream mixture carefully to avoid mixing.

The maple syrup offers a hint of maple and added sweetness which is perfect for this keto flan recipe.

RAMEKINS VS 9-INCH ROUND BAKING DISH:

If you don’t have small individual ramekins you can bake this flan in a 9 inch round baking dish. Follow the recipe as below but increase bake time to 55-60 minutes or until the center is set but with a slight giggle.

Maple Keto Flan

A simple keto Flan recipe that is sweet, creamy, rich, low-carb with a hint of maple.

Servings: 8 (12-cup) ramekins

Ingredients
  

  • 3 4 cup sugar-free maple syrup heated and reduced to 1/3 to 12 cup
  • 2 cups cream
  • 6 eggs
  • 1/2 cup Monkfruit sugar blend or other 1:1 zero-calorie sugar substitute
  • 1 Tablespoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 325°F.
  2. In a small saucepan, heat sugar-free maple syrup over medium-high heat until the syrup becomes very thick and reduces to 1/3 to 1/2 cup. Set aside to cool.
  3. In a 2 quart (or larger) saucepan, blend, cream, eggs, monkfruit sugar, and salt together. Heat over medium heat constantly stirring. Heat until warm to touch. Do not overcook or eggs will scramble.
  4. Removed egg cream mixture from the heat and add in vanilla.
  5. Pour equal parts (about 1 tablespoon) reduced maple syrup into the bottom of 8 small (1/2 cup) ramekins.
  6. Carefully ladle the egg-cream mixture into each ramekin (about 1/2 cup).
  7. Carefully place ramekins in a 9×13 inch baking dish. Add about 3 cups hot water to baking dish. water should be about 34 the way up the sides of the ramekins.
  8. Bake at 325°F for 35-40 or until the center is set but still giggles.
  9. When done cooking, remove ramekins from water. Let cool. Store in refrigerator until ready to serve.
  10. When ready to serve, using a knife, go around the edge of the flan to help it release. Flip and tap until flan releases from dish.
