HOW TO MAKE TIGER BUTTER:

Tiger butter is just another way to say peanut flavored chocolate. This recipe is very easy to make. My youngest (who is currently 4 years old) loves to help make these.

MELT THE CHOCOLATE:

Start with a medium-size microwave safe bowl or measuring cup (like a 4 cup Pyrex glass measuring cup). Add the white chocolate chips and creamy peanut butter to the bowl. Microwave on high for 30-45 seconds. Stir then microwave again for 30 seconds. Stir until the peanut butter mixture is smooth with no white chocolate lumps. If after stirring there are still white chocolate lumps, pop the mixture back into the microwave for another 20-30 seconds. Don’t over heat it. If this happens the chocolate will seize and become hard or thick.

Next, in a separate small bowl, melt the milk or semi sweet chocolate chips (whichever you prefer). Use the same method by microwaving for 30-45 seconds, stir then heat for an additional 30 seconds. Stir until smooth. If lumps remain after stirring, heat for an addition 20-30 seconds.

PREPARE CUPS AND FILL:

Now, on a cookie sheet, place 45-50 #4 glassine candy cups. We like the size of mini Reese’s cups that’s why we use these size #4 candy cups.

For ease and convenience, use disposable piping bags or Ziploc bags with a small hole cut in the tip. This will help getting the chocolate into the small cups much easier and clean up a breeze. You will need a bag for the peanut butter mixture and a bag for the milk/semi-sweet chocolate.

In each candy cup, add a small amount of regular chocolate to the bottom. You want enough to cover the entire bottom of the cup.

Next, pipe in the peanut butter mixture until the cup has a small gap at the top. Don’t over fill.

Last, add a small line or circle of regular chocolate on top. Using a toothpick or something similar, swirl the chocolate on top of the cup.

LET THE TIGER BUTTER CUPS COOL AND SET:

Let the candy cups cool and set. You can do this at room temperature, in the fridge, outside if it’s cold enough or in the freezer if you are in a hurry. They shouldn’t take much to set, usually 10-15 minutes in the fridge is all.

QUESTIONS & ANSWERS:

CAN I USE CRUNCHY PEANUT BUTTER IN THIS RECIPE?

One of the characteristics this recipe is known for is how smooth and creamy it is. By using crunchy peanut butter you will incorporate new texture with the chunks of peanuts. I prefer this recipe made with creamy peanut butter but if you like crunchy, go ahead and give it a try.

Note–if you use crunchy peanut butter and piping bags you will need to make the hole in the tip large enough for the peanut bits to pass through.

WHY IS MY CHOCOLATE HARD AFTER HEATING?

Two things, if you haven’t heated it enough it hasn’t melted. If the chocolate melted then when hard it has seized. This usually happens if the chocolate gets too hot or you introduce liquid to it like food coloring. If it seizes you will have to start over.

DO I HAVE TO USE GLASSINE CANDY CUPS?

I would highly recommend using glassine candy cups for this recipe because they have a non-stick non-grease coating on them that allows the candy to be unwrapped cleanly. The chocolate won’t stick to these cups. They may stick to cheaper non-coated candy cups.

HOW DO I STORE TIGER BUTTER CUPS?

Once the tiger butter cups are set you can stack them without damage. Store candies in an airtight container at room temperature or in the fridge for up to several months. Best eaten at room temperature to enjoy the fudge-like texture.
