These Toasted Coconut Lime Cookies are a delicious way to escape to a tropical paradise without stepping foot outside your door. They come packed with chewy toasted coconut and a tangy lime glaze. These cookies will make you feel like you’re on a tropical express headed straight for a warm sandy beach and beautiful ocean view. This is how I “put the lime in the coconut and shake it all up.” 😉
Here in Utah, January, February, and March are the worst months of the year. At least when it comes to the weather. This year has been no exception. Around this dreary part of the year, I think, there are no major holidays, winter has overstayed it’s welcome, and I really just need a tropical break from life to keep my sanity. Have you ever felt this way? I’m glad I’m not alone!
This past week has been a tough one. On top of all the downsides that come with the nasty, cold Utah winters, my kiddos have been REALLY sick chickies. If you caught my last post (Easy Homemade Hydration Popsicles for Cold & Flu Season), you already know. If not, long story short, we’ve had germs invade! It’s gone from bad to worse this week.
The story of The Icky Germs Invasion came to a climax when our BooBaw continued to fight the yucky bugs in her lungs (bacterial pneumonia) and our little ChewChaw also became ill. A doctor visit on Thursday morning confirmed our baby “ChuChi” had an ear infection AND RSV!!! Ugh! We’ve dealt with RSV before. Last year, our BooBaw was hospitalized because of breathing issues due to RSV. It was some of the longest 4 days of my life. RSV is a nasty virus and I wish it upon no one, especially a happy, bubbly 9-month-old!
Between our BooBaw’s lungs healing and watching ChuChi ever so closely to make sure she’s okay, it’s been draining. Mama needs a break! So what could I do to get a break but not leave the home… Toasted Coconut Lime Cookies.

These Toasted Coconut Lime Cookies are a great way to brighten any day and sent me straight to a beach in the tropics (even if it was only in my mind and lasted a short time 😉 ).
On a lighter note, these cookies are easy and so worth trying. If you need a little pick-me-up or just want a citrusy burst of flavor to welcome some sunshine, these cookies are it. Seriously!

In a mixing bowl, mix the sugar, melted coconut oil, lime zest and juice, coconut extract, and eggs. Once they are blended, add the flour, baking powder, salt, and toasted coconut. That’s it for the cookies. Bake and cool.
For the lime glaze, add the powdered sugar, lime juice, and lime zest together. Once blended, add the milk. It should be a very thin glaze with a tangy and delicious lime flavor. If you want the glaze to be stronger and thicker, you could omit the milk. This would thicken the glaze and create a thicker layer on the cookies.
Once the cookies are cooled, dip the top of each cookie into the glaze then sprinkle with toasted coconut. They’re done! Easy, right? The lime is in the coconut, repeat, the lime is in the coconut! 😉 You will be sitting on a beach in paradise before you know it.
