What’s the best way to toast coconut?

- 1/2 cup sugar
- 1/3 cup coconut oil, melted
- 1 Tablespoon lime juice
- 1 Tablespoon lime zest
- 1/2 teaspoon coconut extract
- 2 eggs
- 1 1/2 cup flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup toasted coconut, separated 1/4 for topping
Lime Glaze
- 3/4 cup powdered sugar
- 1 Tablespoon lime juice
- 1 Tablespoon lime zest
- 1/2 Tablespoon milk
Instructions
Cookies
- Preheat oven to 350 degrees.
- In a mixing bowl, add sugar, melted coconut oil, lime juice, lime zest, coconut extract, and eggs.
- Add flour, baking powder, salt and toasted coconut.
- Scoop 1-inch balls of dough onto cookie sheet lined with parchment paper or a silicone baking mat.
- Bake cookies at 350 degrees for 8-10 minutes or until the middle of the cookie springs back and the bottoms begin to brown.
Lime Glaze
- Blend powdered sugar, lime juice, and lime zest together. Add milk and mix until blended.
- Dip top of cooled cookie into glaze then sprinkle with remaining toasted coconut.
