We love soup especially when it’s cold outside. Not only is it delicious but it’s also a great HOT meal to enjoy without a lot of work. That’s a win, win!

HOW DO YOU MAKE PHILLY CHEESE STEAK SOUP?

This soup is really simple to make and can be ready in about 30 minutes.

INGREDIENTS NEEDED:

  • ground beef
  • green bell pepper
  • onion
  • potato
  • garlic
  • salt/pepper
  • beef broth
  • shredded cheese
  • flour rue (to thicken)

This soup cooks up quickly and is so yummy.

First, saute the ground beef and onions. Then add the seasonings (salt, pepper, garlic).

Next, add the green bell peppers, potato cubes and broth. Bring the mixture to a boil until the potatoes are firm tender (just under done as they will finish cooking as the soup thickens).

Last, add the flour rue to thicken and stir in the shredded cheese until melted.

Philly Cheese Steak Soup

Ingredients

  • 1-1 1/2 lbs ground beef (85/15 or leaner)
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 5 cups potatoes, cubed
  • 5 cups beef broth
  • flour rue (1/2 melted butter mixed with 1/2 cup flour)
  • 1 cup half-and-half or milk
  • 3 cups shredded cheese (cheddar, mozzarella, or Colby or cheddar jack)
  • Serve with garlic bread or toast

Instructions

  1. In a pot (4 quarts or larger) saute ground beef and onions until browned.
  2. Add salt, pepper, diced green bell pepper and garlic. Saute for 30 - 60 seconds.
  3. Add potato cubes and beef broth. turn heat to high and bring to a boil. Cook until potatoes begin to soften (about 10 minutes).
  4. Once potatoes have softened (but are not cooked all the way-they will finish cooking after adding remaining ingredients) add flour rue. Whisk to avoid lumps. As butter melts the flour will begin to thicken the soup.
  5. Last, add the milk and shredded cheese. Stir until cheese is melted.
  6. Serve with garlic bread or toast.
